Green Ginger Berry Power Smoothie

Good morning lovelies!  My body was wonderfully sore this morning from Monday’s workout – yes,  I know it is Wednesday.  Monday’s workout was soo good I’m still feeling it.  One of my favorite muscles to workout is my hamstrings because I can always feel it .  What is yours?  Do you have any recommendations for a good bum workout?  I find that it is hard to really get my bum sore the way I get my hamstrings aching, and who doesn’t need more of a lift, right?  Help me out here folks…

So I felt like I really needed an extra boost this morning, so my smoothie was packed fully of goodness {and still tasted good}!

Green Ginger Berry Power Smoothie

1 handful of spinach

1 tsp chlorella

1 Tbsp maca

1 Tbsp hemp protein

3 strawberries

1/2 banana

1.5 handfuls of frozen berries

2 drops of doTERRA ginger

Add coconut milk to achieve desired thickness.

Whizz all ingredients in a blender/magic bullet and enjoy!

 

 

For the love of routine and the smoothie ritual

One of the hardest things about traveling with a baby is the lack of routine.  We’ve been back home for a few days now and today is the first day we’ve got back on track.  I thrive on routine {heck, without it I practically don’t have time to shower}. The sweet two hours that I get to myself when Lennox is napping is when I get to practice my baking skills, squeeze in a workout, place work phone calls, blog … you get the drift.  Those two hours are what keep me sane, in love with life and present with Lennox when he is awake.  So, for now, it’s nice to be home and easing back into our routine!  I especially missed the morning smoothie ritual…here was today’s masterpiece:

Wild Orange and Berry Smoothie

1 handful of spinach

1 Tbsp hemp protein

2 handfuls of frozen berries

1/2 banana

4 drops doTERRA wild orange essential oil

coconut milk

Directions: Pack spinach and other ingredients into blender, add milk to desired consistency. Blend and wah la!  {I’ve fallen in love with the magic bullet – it helps me so I don’t go over board and end with smoothies for 3}

Vegan Coconut Lime Muffins

Eager to try out my new doTERRA lime oil in a recipe I got to work this morning.  We are going on a road trip today to Havasu {yippee} and so I needed to make some yummy snacks.  Here is what I came up with.

OK, you are probably wondering why there are so green, right?  One of my favorite secret ingredients…you guessed it, SPINACH!

Vegan Coconut Lime Muffins

2 cups spinach

1 3/4 cup coconut milk

1 tsp apple cider vinegar

1 tsp vanilla

20 drops doTERRA lime oil

1 Tbsp chia seeds

1 Tbsp maca

2 cups quick oats

1/2 cup coconut flour

1/2 cup golden flax meal

1/2 cup coconut sugar

1 tsp baking soda

1 tsp baking powder

Directions Combine dry ingredients.  Add ACV to coconut milk and let sit.  Whizz spinach in a blender/food processor/whatever.  Add chia seeds to spinach.  Combine all ingredients.  Wah la.  Pour into baking tin or whatever you choose.  Bake at 350 till done – about 30 minutes for me.

Vegan Chocolately Peanut Buttery Cookie Dough Balls

Chocolate and peanut butter might just be the best flavor combination on the planet!!  If you agree with me, this recipe is a must for you!  The good totally awesome news is – it’s a healthy treat!  No processed sugars, gluten or eggs – hooray!  What are you waiting for?  Get out your food processors and let’s do this!

Chocolatey Peanut Buttery Cookie Dough

1 cup oats

3/4 cup organic raw carob powder

1 Tbsp maca

1/2 cup coconut shreds

2 heaping Tbsp natural peanut butter

1 tsp vanilla

4 dates

1/3 cup coconut milk {could be more}

1/2 cup organic raw cacao nibs

Directions: Whizz oats in food processor until it’s nice and powdery.  Add maca, carob and coconut shreds and whizz some more.  Add vanilla,dates and PB. Slowly add coconut milk until dough starts to form.  Once desire consistency is achieved add cacao nibs and pulse until combined.

I used a cookie dough baller thingy to make my balls. { Not sure what it’s really called,but it’s what we always used growing up to make cookies.}  You really need to pack the dough in tight for a nice ball to form.  The cacao nibs make the dough a little crumbly, but just form it up with your fingers if needed.

After a few hours, the cacao nibs start to soften but still remain slightly crunchy.  I made mine yesterday and they are even softer today which might be good for those who don’t like the crunchiness of the nibs.

Makes about two dozen.

Confession: I had two {ok, maybe 3} for breakfast with some orange slices.  The only thing better than chocolate and peanut butter is adding some oranges to the mix.  PS, I’m still keeping with my raw challenge…lunch and dinner will most certainly be raw!

Do you ever wake up craving chocolate?  Today I had a craving for something chocolatey and peanut buttery.  First thing in the morning – really? I believe you need to listen to your cravings –  it’s your body telling you something.  So, I listened…

Green Choco-Peanut Butter Smoothie

2 handfuls of frozen peaches

2 heaping Tbsp natural peanut butter

2 heaping Tbsp raw carob powder

1 tsp chlorella

1 tsp maca

1 1/2 cups coconut milk (more or less)

raw cacao nibs

Directions: Whizz in blender.  Sprinkle with nibs.  Yummy!

Peachy Carob Smoothie

To make room for a photo of this morning’s breakfast creation I had to purge some photos from my iPhone.  With well over 300 photos and videos taking up space it was time to clean house.  I hate it when this happens.  The photos are all saved on my computer but it still breaks my heart to delete photos of Lennox.  Scrolling to the top, I always delete the oldest first – it’s become my ritual.  Seeing how much the little guy has grown in such a short time makes me more sad and just plain proud. That little boy has grown from a little speck in my tummy to a speed crawler –  gosh – that still amazes me.  Now someone remind me why I chose to get the 16gb and not the 32gb iPhone.  I woulda had much more space to keep those precious snapshots of my little monkey.  When this phone dies, I’m goin’ big on the next one!

Peachy Carob Smoothie

1 1/2 handfuls of frozen peaches (such scientific measurement I know)

1/2 banana

1 tsp chlorella

1 tsp maca

2 Tbsp raw organic carob powder

1 cup coconut water (just guessing, I didn’t measure)

Raw cacao nibs to sprinkle on top

Directions:Whizz in blender till peach chunks are gone.  Pour into a fancy glass and sprinkle with cacao nibs.  Drink some and go back for more cacao nibs.  Repeat.

Strawberry Lemongrass Smoothie

Yesterday I finally made it to the gym. Yay!  These days I’d choose an hour at the gym over an hour at the day spa (well really I would pick both).  Lennox doesn’t particularly like the day care at the gym and I’m right there with him on that, so I sneak off to the gym when my family is available to hang out with the little dude.  Unfortunately, because I don’t get to go as regularly as I would like, I tend to go a little overboard.  Yesterday was no exception.   In my book there isn’t much that is better than that day after soreness from a good workout…to a point.  So to combat what I felt was a little too much of a good thing I made this smoothie.

Strawberry Lemongrass Smoothie

1 banana

7 strawberries

1 cup coconut milk

1 handful of ice

1 tsp chlorella(high in protein and B12)

1 tsp chia seeds (helps speed recovery)

1/2 tsp to 1 tsp agave nectar (or sweeten as you choose)

4 drops doTERRA lemongrass

Directions: Whizz in blender and thank me later!

As an athlete, lemongrass is one of my favorite essential oils.  Not only does it smell divine (at least I think so), it is awesome in so many ways.  It’s an anti-inflammatory, after exercise it promotes relief of lactic acid build up (great for rubbing on sore muscles), it can increase athletic performance by increasing blood circulation, and it enhances energy.  Lemongrass is a mild diuretic and cleansing to the bladder and kidneys.  It can reduce cholesterol, relieve chronic fatigue symptoms, it stimulates and strengthens the nervous system.  Lemongrass is a great way to wake up the lymphatic system and it invigorates and strengthens the entire body.  Doesn’t is sound like the perfect addition to a morning smoothie?  I thought so too!
